Is it even fall without pumpkins? Furthermore, is it fall without pumpkin pancakes? I'm going to go ahead and say no for you because I already know the answer.

It's basically a hobby of mine to find ways to use pumpkin puree in the fall. There are seemingly endless options, but an easy favorite are these sugar-free pumpkin pancakes. They seriously kick ass.

I want to start off by saying I adapted this recipe from one by The Rebel Chick. It's very similar, but I kicked up the flavor a bit.

If you want to keep this totally sugar-free, I highly recommend the Livlo sugar-free keto maple syrup. Nothing compares...seriously. I've tried so many sugar-free maple syrup alternates and this is the only one I found that tastes like syrup and has the right texture. Thank me later.

Also, I used the Dash pumpkin mini waffle maker to make the shape. It says waffle, but they turn out more like a pancake so I'm saying pancake. They turned out so cute, but this is a bit of a pain. It takes 2.5 minutes to make one tiny pancake. Do the math there. I would say it takes about 6 per person for a meal. I suppose it depends on how many people you're making these for. I highly recommend making them as a side or finding something to do in the interim. I cleaned my kitchen while making these this morning.

Ingredients:

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 teaspoons pumpkin pie spice
1 1/4 cup pumpkin puree
1-1/2 cups milk
2 eggs
2 teaspoons vanilla

  1. Mix your dry ingredients: flour, baking powder, baking soda, salt and pumpkin pie spice.
  2. Add pumpkin puree, milk, eggs and vanilla until just combined.
  3. Use your waffle iron or pan to make your goodies! If you use the tiny pumpkin waffle maker, it's 2.5 minutes per waffle.

Done and done! I hope you love them.
